First of all, I want to thank my friend, Nikki, for allowing me to share this wonderful recipe! This side dish had me fall in love at first bite! She invited me over for dinner about a month ago and she had me try it, and let me tell you, I wanted to take it home and eat it all to myself! It's fresh, easy, healthy, and delicious!
RECIPE
Serves 4
1 package cherry tomatoes, halved
1/3-1/2 cup of crumbled or cubed feta cheese
1/4 of sliced red onion
2-3 teaspoon balsamic vinegar
1-2 teaspoon olive oil
1 teaspoon oregano
salt and pepper to taste

- Slice the red onion and place in a bowl.
- Pour in the balsamic vinegar and olive oil into the bowl of onions, toss, and let it sit for a few minutes to marinate.
- Slice the tomatoes in half and toss them in with the onions.
- Sprinkle with oregano, salt and pepper to taste.
- Drop in the feta cheese and lightly toss.
- Enjoy!
